Mango Salad with Avocado, Arugula and Red Onion

Ingredients

  • 2 oranges
  • 1 Red Onion
  • 1 ripe Mango
  • 1 ripe Avocado
  • 25 g peanuts (unsalted and roughly chopped)
  • 1 bundle arugula
  • 3 spring onions
  • 3 tbsp olive oil
  • Salt
  • pepper (ground)

Instructions

    Peel the oranges with a sharp knife, removing all white membranes. Then cut along the segments to release the flesh, catch the juice and squeeze out any remaining pulp by hand.

    Peel the onion and slice into thin rings. Peel the mango, cut about 1 cm thick slices from the stone, then dice into small pieces.

    Halve the avocado, remove the pit and scoop the flesh whole with a spoon, then cube it to about 1 cm. Wash and trim the spring onions, slicing them into rings.

    Combine orange segments, mango cubes, onion rings and avocado cubes in a bowl and gently mix together. Whisk the orange juice with olive oil, salt and pepper, then fold into the salad.

    Wash, dry and tear the arugula into bite‑sized pieces. Arrange the arugula and salad on plates, sprinkle with peanuts and serve immediately.
