Ingredients

  • 4 passion fruits
  • 1 small mango
  • 200 g soy quark (or other plant-based quark)
  • 1 tbsp rice syrup
  • 150 ml soy cream (for whipping or other plant-based whipped cream)
  • 100 ml Soy drink (Soy milk)
  • 1 tsp agar-agar
  • 15 g coconut chips

Instructions

    Halve the passion fruits and scoop out the pulp. Peel the mango, cut the flesh from the pit, and blend it with half of the passion fruit pulp in a blender.

    Add the soy quark and rice syrup to the blender and mix until smooth.

    Whip the soy cream in a mixing bowl with an electric mixer until creamy.

    In a saucepan, whisk the soy drink with agar-agar and bring to a boil while stirring; simmer for about 2 minutes.

    Stir the hot soy drink into the puree. Then fold in the whipped cream quickly.

    Pour the mango mousse into dessert glasses and chill for about 1 hour.

    While chilling, toast the coconut chips in a dry skillet over medium heat for 2–3 minutes.

    Serve the mango-passion fruit mousse topped with remaining passion fruit pieces and sprinkled with toasted coconut chips.
