Almond Cake

Ingredients
- soft butter (for the baking pan)
- soft breadcrumbs (for the baking pan)
- 250 g soft butter
- 300 g sugar
- a pinch of salt
- 1 untreated orange (juice and zest)
- 4 eggs
- 250 g flour
- 1 tsp Baking powder
- 250 g ground almonds
- 80 ml milk
- powdered sugar (for dusting)
- 2 oranges
- 1 lemon
- 0.5 cinnamon stick
- 40 ml orange liqueur
- 50 g sugar

Preheat the oven to 160°C fan-forced. Grease a springform pan with butter and line with breadcrumbs.

Beat the butter with 250 g sugar until pale and creamy. Stir in salt, orange juice and zest. Gradually add eggs while mixing. Combine flour, baking powder and 200 g almonds, then alternate adding this mixture with milk into the egg-butter base until a smooth, thick batter forms. Pour into prepared pan, level the surface, and bake for about 1 hour (test with a skewer). Mix remaining almonds with the rest of the sugar, sprinkle over the cake in the last ~10 minutes to brown slightly. Remove from oven and cool.

For the sauce, squeeze juice from oranges and lemon, then simmer with cinnamon, orange liqueur and sugar until thickened about 5 minutes. Strain through a fine sieve and let cool.

Release the cake from the pan, cut into pieces, and serve in bowls topped with the citrus sauce.
