Ingredients
- 3 egg whites
- 2 tsp lemon juice
- 150 g powdered sugar
- 180 g pine nuts
- 2 tbsp flour

Preheat the oven to 140°C fan-forced. Line a baking sheet with parchment paper.

Beat the egg whites with the lemon juice until very stiff peaks form. Gradually fold in the powdered sugar, continuing to beat until a firm, glossy batter forms. Finely grind the pine nuts except for 2 tbsp, mix with the flour and gently fold into the batter. Spoon the mixture into a piping bag fitted with a large round tip. Pipe small mounds onto the baking sheet, sprinkle with the remaining pine nuts, and bake in the preheated oven for about 15 minutes.
