Mango Oat Bars

Ingredients

  • 250 g delicate rolled oats
  • 100 g coarse oatmeal flakes
  • 100 g Spelt flakes
  • 200 g brown cane sugar
  • 50 g beetroot syrup
  • 250 g butter
  • 1 Mango
  • whole wheat flour (as needed)
  • 75 g pumpkin seeds
  • 75 g peanuts
  • 75 g sunflower seeds

Instructions

    Preheat the oven to 160°C fan.

    Coarsely crush the oatmeal and spelt flakes in a blender and mix with the cane sugar in a bowl. Slowly heat the beetroot syrup and butter in a saucepan, stir well, then combine thoroughly with the oats and sugar. Peel the mango, cut the flesh from the pit and finely puree it. Fold the puree into the mixture until it becomes spreadable; add a little whole wheat flour if needed. Spread onto parchment paper to about 1 cm thickness and press flat. Cut into bars with a knife (preferably dampened). Mix pumpkin seeds, peanut halves, and sunflower seeds together and roll the bars in them. Place on a sheet lined with parchment.

    Bake in the oven for 25‑30 minutes until golden brown. Remove from the oven and cool on a wire rack.
