Maraschino Fruit Salad
A fresh fruit salad featuring citrus, stone fruits and a sweet maraschino glaze.

- 1 lemon
- 3 tbsp sugar
- 100 ml maraschino liqueur
- 4 cloves
- 2 oranges
- 2 peaches
- 1 pear
- 1 Banana
- mint (for garnish)

Squeeze the lemon. Caramelize the sugar in a pot until light brown. Add maraschino, lemon juice, cloves and 100 mL water; simmer uncovered for 5–6 minutes over high heat. Set aside to cool. Peel the oranges, removing all white pith. Carefully cut orange segments between the membranes, squeeze out remaining pulp and catch the juice. Remove the white skin from one whole orange. Slice the peel into very fine strips and blanch in boiling water for 1 minute. Shock in a colander and drain well. Mix orange strips and collected juice with the syrup. Wash peaches, cut flesh into wedges removing pits. Peel the pear, quarter it and carefully remove the core. Slice pear into three equal pieces. Peel the banana and slice into ½ cm thick rounds. Immediately combine oranges, peaches, pears and bananas with the syrup; let stand for 10 minutes. Arrange in bowls and garnish with mint.
