Ingredients

  • 800 g elderberries
  • 500 g hawthorn berries
  • 500 ml water
  • 500 g gelatinizing sugar (3:1)
  • 2 tbsp lemon juice

Instructions

    Wash the berries and combine with water in a pot. Cook gently for about 30 minutes until soft, occasionally mashing slightly with a potato masher.

    Strain through a sieve. Stir in the gelatinizing sugar and lemon juice. Simmer while stirring for about 4 minutes until bubbling. Fill jars generously and seal tightly.
