Ingredients

  • 2 cm ginger
  • 0.5 tsp mint (finely chopped)
  • 1 tbsp Lemon Juice
  • 2 firm bananas (~250 g flesh)
  • 130 g cold-set pectin sugar (e.g., Fix und Fruchtig)

Instructions

    Peel the ginger, slice into thin rounds and finely chop. Peel the bananas, roughly mash them, and combine with the ginger and mint in a tall mixing bowl.

    Add the pectin sugar and blend vigorously with an immersion blender for 45 seconds. Fill sterilized jars to the brim and seal tightly. Store in the refrigerator.
