Mango Ice Cream

Ingredients

  • 2 medium ripe mangoes (about 600-700 g)
  • 1 lemon (zest and juice)
  • 400 g heavy cream
  • 1 tbsp liquid honey
  • Mango pieces (for garnish)

Instructions

    Peel the mangoes, remove the flesh from the pit, and dice.

    Add mango flesh, honey, lemon juice, and zest to a blender and puree very finely. Whip the cream until stiff peaks form and fold into the mango mixture. Pour the mixture into a shallow metal bowl, cover, and place in the freezer for 3-5 hours. When the mixture begins to freeze, stir vigorously with a fork. Repeat this three to four times every 20 minutes. (Alternatively finish in an ice cream maker).

    Scoop the ice cream into bowls, garnish with mango slices, and serve.
