Mango from the Grill

Ingredients
- 150 g pineapple flesh (fresh)
- 1 untreated lime
- 1 untreated lemon
- 2 cm ginger
- 4 tbsp Honey
- 20 ml white rum
- 4 ripe mangoes
- plant oil (for brushing)

Dice the pineapple flesh into small cubes. Wash the lime and lemon hot, pat dry and zest each peel. Squeeze the juice of both fruits. Peel and finely chop the ginger. Combine with citrus juices, zests, honey, and rum; heat gently. Add the pineapple, remove from heat, and let steep.

Wash the mangoes, cut them just above the pit into halves, and brush the cut surfaces lightly with oil. Grill each side on a hot grill for about 10 minutes until charred.

Plate the grilled mango slices and drizzle the pineapple sauce over them before serving.
