Ingredients

  • 80 g candied cherries
  • 100 g cold butter
  • 80 g cane sugar
  • 1 pinch salt
  • 1 egg
  • 225 g flour
  • 1 tsp Baking powder
  • 0.25 tsp cinnamon and clove powder (each)
  • 0.25 tsp Ginger powder
  • 80 g chopped almond kernels
  • 1 egg yolk
  • 25 candied cherries
  • 40 g flaked almonds

Instructions

    Chop the cherries, then knead with butter, cane sugar, salt, egg, flour, baking powder, spices and almonds into a dough. Shape into a roll about 4 cm thick, wrap in foil and refrigerate for 1 hour.

    Cut the roll into slices about 5 mm thick and place on a parchment-lined baking sheet. Beat the egg yolk and brush it over the cookies. Halve the candied cherries and top each cookie with one cherry half and flaked almonds. Bake in a preheated oven at 180°C (350°F) for about 12 minutes.
