Mango Cod with Rice

Ingredients

  • 150 g Basmati rice
  • Salt
  • 400 g cod fillet
  • 10 g ginger (1 piece)
  • 1 tsp Mustard
  • 2 tbsp olive oil
  • Pepper
  • 2 red bell peppers
  • 2 ripe mangoes
  • 2 stalks tarragon
  • edible sweet paprika powder

Instructions

    Cook the rice in salted water according to package instructions.

    Meanwhile rinse the cod fillet under cold water, pat dry and cut into 2 cm cubes. Squeeze lime, peel and grate ginger.

    Mix lime juice with ginger, mustard and 1 tbsp oil, season with salt and pepper, then pour over the fish. Mix well and let marinate for about 20 minutes.

    Wash, deseed and clean the bell peppers. Peel mangoes, cut flesh away from the pit. Dice peppers and mango into bite‑sized pieces. Wash tarragon, shake dry and chop.

    Heat remaining oil in a pan. Sauté pepper cubes, add fish and pour over the sauce. Simmer on medium heat for 5–7 minutes. Add mango cubes and tarragon, season with paprika powder and serve with rice in bowls.
