Ingredients

  • 1 Mango
  • 4 tomatoes
  • 2 shallots
  • 1 Garlic clove
  • 4 tbsp brown sugar
  • 1 tsp freshly grated ginger
  • 80 ml apple cider vinegar
  • 1 tbsp finely chopped coriander leaves
  • Salt
  • Cayenne pepper

Instructions

    Peel the mango, remove the flesh from the pit and dice into small cubes. Heat the tomatoes briefly, shock in cold water, peel, quarter, seed and also dice into small cubes. Dice the shallots and finely chop them.

    Melt the sugar in a pan until lightly caramelized. Add the shallot, garlic and ginger, then deglaze with vinegar. Add the mango and tomato cubes, cover and simmer gently for about 10 minutes.

    If needed, add a little water. Finally stir in coriander leaves and season with salt and cayenne pepper. Let cool.
