Date Cake

Ingredients
- 300 g dates (pitted)
- 175 g butter
- 2 Bananas
- 0.5 tsp vanilla powder
- 3 eggs
- 2 tbsp Cornstarch
- 90 g spelt flour type 1050
- 60 g cocoa powder
- 1 tsp Baking powder
- 50 g pecans (coarsely chopped)
- 50 g ground almonds
- 120 g dark chocolate
- 1 tsp coconut oil
Instructions

Cut the dates into very small pieces and place them in a closed pot with just enough water to cover. Let sit for 10 minutes at no heat. Then bring to a vigorous boil for about 2 minutes, stirring frequently until a puree forms. Remove from heat and let cool.

Add the soft butter, mashed bananas, vanilla powder, and eggs to the date puree and stir until a homogeneous mixture forms.

Sift together the cornstarch, flour, cocoa powder, and baking powder over the date mixture. Mix well, then fold in the nuts.

Pour the batter into a prepared baking tin and bake in a preheated oven at 200 °C (180 °C fan; gas level 3) on the middle rack for about 30 minutes. Then cover and bake for another 30 minutes.

Let the cake cool in the tin.

Melt the glaze over a hot, non-boiling water bath and spread it evenly over the cake. Let it set, then cut into 12–16 squares to serve as a gift-wrapped treat.
