Ingredients

  • 2 cooked lobsters (about 500 g each)
  • 3 limes (juice)
  • 1 tsp sea salt
  • 6 tbsp Olive oil
  • 4 red chili peppers
  • 4 tbsp freshly chopped coriander leaves
  • 1 bunch mint
  • pepper (ground)
  • 2 tsp Curry powder
  • 3 mangoes

Instructions

    Break the lobster meat out and cut into bite-sized pieces.

    Wash the chili peppers and slice into rings. Wash the mint and finely chop half of the leaves. Mix lime juice with salt and oil, then stir in chopped mint, coriander leaves, and chili rings; season with pepper and curry powder.

    Place the lobster pieces in this dressing and let marinate for about 1 hour.

    Peel the mangoes and cut the flesh into strips from the stone. Place one lobster piece on each mango strip and garnish with mint leaves.
