Ingredients
- 1 small whole chicken (ca. 1 kg)
- 3 tbsp butter
- Salt
- Pepper (freshly ground)
- 4 mandarins

Wash the chicken, pat dry, and season with salt and pepper. Melt the butter and brush it over the chicken. Place the chicken breast-side down in a suitable roasting pan and roast in a preheated oven at 220°C for 20 minutes.

Meanwhile, peel the mandarins. After 20 minutes, flip the chicken, pour one cup of salted water over it, and continue roasting for another 20 minutes, spooning the liquid over the chicken repeatedly. Add the mandarin slices during the last 5 minutes.
