Apricot Dumplings

Ingredients
- 1 kg cooked potatoes (from the day before)
- 75 g flour
- 75 g Semolina
- 1 egg
- Salt
- nutmeg
- 12 small apricots (or marille)
- 12 pieces cube sugar
- Salt
- 80 g Butter
- 50 g breadcrumbs
- sugar (for sprinkling)
- cinnamon (for sprinkling)

Wash and drain the apricots. Cut each of 12 apricots in half, pit them, and place a small piece of sugar inside each one. Set aside the remaining apricots cut in halves and pitted. Peel the potatoes and mash them with a potato masher, then knead in flour, semolina, salt, nutmeg, and egg until smooth. With floured hands roll the dough into a log and slice it into 12 pieces. Press an apricot with sugar cube into each dough piece and seal tightly with dough. Drop the dumplings into a pot of lightly salted boiling water and let them cook for about 20 minutes.

Melt butter in a pan, add breadcrumbs, and toast until golden yellow while stirring. Remove the finished apricot dumplings with a slotted spoon, drain, and arrange on preheated plates. Pour the breadcrumb-butter over them and serve topped with cinnamon sugar.
