Pizza Napoli

Ingredients
- 0.5 cube yeast (21 g)
- 1 pinch sugar
- 350 g flour
- 3 tbsp olive oil
- oil (for the pizza tray)
- 1 tsp salt
- 400 g chunky tomatoes (canned)
- 150 g Parma ham
- 300 g mozzarella
- 1 chili pepper
- 1 tbsp capers
- 20 anchovies
- 20 black olives (pitted as desired)
- olive oil (to drizzle)
- parsley (for garnish)

For the dough, crumble the yeast into a bowl and stir in sugar and about 175 ml lukewarm water until smooth. Add the flour, olive oil and salt, then knead everything into a supple dough. Cover and let rise in a warm place for about 1 hour.

Preheat the oven to 220°C fan.

Shape the dough into 4 balls, roll each into a thin disc on lightly floured surface and place on 4 oiled baking trays. Spread the chunky tomatoes over the discs, leaving a border of about 1 cm. Season with salt and pepper. Distribute the ham over the tomatoes. Sprinkle with diced cheese. Slice the chili pepper into rings, scatter over the cheese, and top with capers, anchovies and olives. Drizzle with a little oil and bake in the preheated oven for about 25 minutes until golden brown. Garnish with parsley before serving.
