Maki with Sesame and Spinach

- 250 g Spinach
- 1 tbsp peanut oil (cold-pressed)
- Salt
- 0.5 tsp wasabi
- 2 roasted nori sheets
- 200 g ready-made sushi rice
- vinegar water (for shaping)
- soy sauce (for serving)
- wasabi (for serving)

Wash and trim the spinach. Place the leaves in a pot, let them wilt under high heat until they collapse. Transfer to a colander, squeeze out excess liquid and allow to drain thoroughly. Chop the drained spinach, blend with oil, a pinch of salt and wasabi paste into a fine puree, then strain through a sieve if desired.

Trim the edges of the nori sheets if needed and cut them into eight strips about 3 cm wide (each 15 cm long). Divide the sushi rice into eight portions and shape each into an oval mound using hands dampened with vinegar water. Wrap one nori strip around each rice mound, smooth side outward. Press a rice grain onto the end of the strip to seal. Gently press the rice inside the nori strip downward; place the sushi on a board for this step. Top each piece with a small amount of spinach mixture and spread evenly. Sprinkle sesame seeds over the top. Serve soy sauce and wasabi separately.
