Almond Cake

Ingredients

  • 250 g shelled almonds
  • 8 eggs
  • 250 g powdered sugar
  • untreated lemon zest
  • 1 tsp cinnamon
  • 1 packet vanilla sugar
  • breadcrumbs (or semolina for the pan)
  • powdered sugar

Instructions

    Preheat oven to 180°C.

    Separate the eggs. Finely grind the almonds. Whisk powdered sugar with the yolks until smooth. Add almonds, lemon zest, cinnamon and vanilla sugar and mix well.

    Whisk egg whites very stiff and fold them into the almond-yolk mixture.

    Grease a springform pan (26 cm diameter) and line it with breadcrumbs or semolina. Bake the cake for about 50 minutes.

    Dust with powdered sugar before serving.
