Almond Pudding with Berries

Ingredients
- 500 ml milk
- 10 ml almond liqueur
- 50 g ground almonds
- 50 g whipped cream (whipped)
- 4 egg yolks
- 100 g sugar
- 4 sheets white gelatin
- 2 egg whites
- 300 g mixed berries (strawberries, raspberries and currants)
- 150 g whipped cream (whipped)

Soak the gelatin in plenty of cold water. Split the vanilla pod lengthwise, scrape out the seeds and place the pod with seeds and milk in a pot; heat slowly until it comes to a boil once, then set aside and remove the pod. Whisk the egg yolks and almond liqueur with sugar over a gentle bain‑marie until frothy. Lightly toast the almonds in a dry pan without browning, then set aside. Slowly pour the milk into the yolk mixture in a thin stream while continuously whisking; add the almonds. Continue whisking until the mixture starts to thicken slightly in the bain‑marie, squeeze out the gelatin and dissolve it in the warm cream. Whip the cream over an ice bath until cold. Beat the whipped cream and egg whites until stiff peaks form; once the cream has cooled enough to begin setting, fold in the whipped cream. Spoon the mixture into glasses or bowls and chill for about 1–2 hours.

Wash, trim and clean the berries before serving. Slice strawberries, for example, into rounds.
