Madeleines

Ingredients
- 125 g flour
- 1 packet baking powder
- 1 tsp bicarbonate of soda
- 2 Eggs
- 50 g sugar
- 1 packet vanilla sugar
- 4 Tbsp sunflower oil
- 2 drops rose water
- powdered sugar (for dusting)
- butter
- flour (for the pan)
- organic rose petals (for garnish)

Preheat the oven to 180 °C (top/bottom heat). Grease the depressions of the Madeleine tin with butter and dust with flour. Thoroughly mix flour, baking powder, and bicarbonate in a bowl. Beat the eggs. Add sugar, vanilla sugar, oil, rose water, and sour cream to the dry mixture and quickly whisk with the eggs until the batter is thick enough to fall from a spoon.

Fill the tin cavities with batter. Bake in the preheated oven on the middle rack for about 15–20 min (do the toothpick test). Remove, let cool in the pan for a few minutes, then release and allow to cool completely. Dust with powdered sugar and serve on rose petals.
