Almond Cake

Ingredients
- 200 g Flour
- 1 egg
- 1 yolk
- 125 g butter
- 150 g chopped almonds
- 125 g powdered sugar
- 1 tbsp grated lemon zest
- 2 lemons (juice)
- 3 tbsp toasted almond flakes
- 1 pinch salt
- butter (for the pan)
- milk (for brushing)
- powdered sugar
Instructions

Knead flour, egg, yolk, finely cut butter and a pinch of salt quickly into dough, shape into a ball and wrap in foil for 30 minutes in the refrigerator.

Mix chopped almonds with powdered sugar, lemon zest and juice.

Roll out dough on floured surface and cut two 24 cm circles. Place one circle in the pan, lift edge about 1 cm, fill with almond mixture, smooth, top with second circle. Press edges gently with a fork and pierce surface several times, brush with milk and sprinkle almond flakes.

Bake in preheated oven at 200°C on middle rack for about 40 minutes, remove, cool, and dust with powdered sugar before serving.
