Low-Carb Cinnamon Stars

The low-carb cinnamon stars from Spoonsparrow are always delicious.

Ingredients

  • 4 egg whites
  • 200 g erythritol powdered sugar
  • 1 Vanilla bean
  • 1.5 tsp cinnamon
  • 200 g ground almonds
  • 200 g Ground hazelnuts

Instructions

    Beat the egg whites in a stand mixer on high speed until very stiff. Sift the powdered sugar and gradually fold it into the whites. Set aside 5 tablespoons of the mixture for brushing the stars.

    Split the vanilla bean lengthwise and scrape out the seeds with a knife. Gently stir the vanilla, cinnamon, almonds, and hazelnuts into the remaining meringue using a spatula or dough scraper until a compact dough forms.

    Roll the dough between two sheets of plastic wrap to about 1 cm thickness with a rolling pin. Cut out star shapes with a cookie cutter.

    Place the stars on a baking sheet lined with parchment paper and brush them with the reserved meringue using a spoon or brush. Bake in a preheated oven at 140 °C (fan) for 10–15 minutes, watching carefully so they do not brown.
