Ingredients
- 0.5 lobster (pre-cooked and split)
- 4 leaves radicchio
- 1 avocado (ripe)
- 1 Shallot
- 1 lemon (organic, juice and zest)
- 4 sprigs dill
- 4 sprigs chives
- Salt
- Pepper
- 1 tbsp pesto rosso
- 2 tbsp oil
- 1 tsp white wine vinegar
- 0.5 garlic clove
- 4 lemon slices (very thinly sliced, lightly candied)
Instructions

Wash the avocados, halve them, remove the pits and loosen the flesh from the skins; mix with lemon juice and roughly chop. Peel the shallot and finely mince it, stir into the avocado mixture, and arrange on plates using serving rings. Shake the radicchio dry after washing.

Place the lobster pieces atop the radicchio, garnish with dill, chives, lemon zest and lemon slices.

For the vinaigrette mix pesto with oil, vinegar and a finely chopped lemon slice; add 1–2 tbsp water if needed, then drizzle decoratively over the plate before serving.
