Ingredients
- 1 lobster (cooked, halved and ready to serve with claws removed)
- 1 untreated lemon
- 20 ml sherry
- 2 tbsp tarragon (thinly sliced)
- 4 tbsp butter
- Salt
- ground pepper

Halve the lemon and juice one half. Slice the other half into rounds. Season the lobster with salt and pepper.

Heat the butter in a sauté pan with the lemon slices and brown the lobster on the meat side over gentle heat for about 2-3 minutes. Deglaze with lemon juice and sherry, then flip. Add tarragon and continue to spoon hot butter over the meat repeatedly.

Add the claw meat and cook together in the butter for about 2 minutes. Season lightly again and serve immediately.
