- 50 g carrots
- 50 g celery root
- 2 Spring Onions
- 8 lobster crabs (raw, with shell)
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt
- pepper from grinder
- 1 Papaya
- lime juice
- 100 g alfalfa sprouts
- Watercress
Instructions

Peel carrots and celery root. Clean and rinse spring onions. Dice carrots, celery root, and spring onions very finely.

Peel, halve the papaya, remove seeds, and cut flesh into strips. Drizzle with lime juice.

Arrange lobster crabs with vegetables, papaya, and alfalfa sprouts on a plate. Garnish with watercress and serve.
