Ingredients

  • 500 g herring fillet
  • 1 Shallot
  • 40 g sun-dried tomatoes (in oil)
  • 2 pickled cucumbers
  • 2 tbsp freshly chopped parsley
  • 1 tbsp Lemon Juice
  • 2 tbsp olive oil
  • Sea salt
  • Pepper (freshly ground)
  • 4 quail egg yolks
  • a handful arugula

Instructions

    Rinse the herring, pat dry and finely chop. Peel and finely chop the shallot. Drain the tomatoes and cucumbers well and cut into small pieces. Combine all prepared ingredients in a bowl, add parsley, lemon juice, olive oil, salt and pepper, mix well and taste. Spoon into small molds, press down and transfer to plates.

    Beat the eggs and separate yolks from whites. Place one yolk on each tartare (use whites elsewhere) and garnish with cleaned arugula before serving.
