Ingredients
- 200 g Flour
- 200 g butter
- 100 g powdered sugar
- 100 g Ground Almonds
- 1 egg yolk
- 0.25 tsp ground cloves
- 0.5 tsp ground cinnamon
- 1 tsp grated lemon zest
- 1 tbsp Lemon Juice
- 250 g currant or raspberry jam
- pickled bird cherry (or cherries)
Instructions

Knead flour with butter and almonds, then incorporate all remaining ingredients into a smooth shortcrust dough. Wrap the dough in cling film and chill for one hour.

Press 2/3 of the dough into a springform pan and spread the currant jam up to 1 cm from the edge. Roll out the remaining dough, cut to size, place on top, and press firmly.

Beat egg yolk with a splash of water, brush over the dough. Place in the center of a preheated oven at 175°C and bake for about 50 minutes. Remove, release the pan, let the cake cool. Before serving, top with bird cherries.
