Gnocchi with Cream Sauce and Ham

Ingredients
- 1 kg starchy boiling potatoes (from the day before)
- 250 g flour
- 1 egg
- 1 tsp salt
- 50 g grated Parmesan
- 100 ml whipping cream
- 100 ml milk
- 2 Tbsp grated Parmesan
- sauce thickener (light, to taste)
- 0.5 tsp seasoned broth
- 150 g Parma ham (thinly sliced)
- parmesan for sprinkling

Peel the potatoes and press them through a potato ricer. Knead with flour, egg, Parmesan, and salt. Roll the dough into finger‑thick ropes, cut into pieces, and press a pattern with the back of a fork. Place side by side on a cutting board and let rest for 15 minutes. Bring plenty of salted water to a boil and cook the gnocchi over low heat for 3–5 minutes until they rise to the surface.

Heat cream and milk in a pot, stir in Parmesan and broth, season, and thicken with sauce thickener. Remove from heat and drain well. Add the gnocchi to the sauce, mix gently. Tear the Parma ham into small pieces and fold them into the gnocchi. Plate the gnocchi with cream sauce and ham, sprinkle with Parmesan, and serve.
