Linsen-Chicorée-Salat mit Ziegenfrischkäsetalern
Der Linsen-Chicorée-Salat mit Ziegenfrischkäsetalern von Spoonsparrow ist fix gemacht und schmeckt als Vorspeise genauso gut wie als leichtes Abendessen.
Ingredients
- 600 g chicory (3–4 pieces)
- 3 spring onions
- 2 carrots
- 375 g lentils (canned)
- 1 EL mustard
- 3 EL apple cider vinegar
- 4 EL walnut oil
- Salt
- Pepper
- 180 g goat cheese roll (45% fat in cream)

Clean and wash the chicory, remove the outer large leaves entirely and set aside; discard hard stems from the rest and cut the leaves into strips. Clean, wash and slice spring onions into thin rings. Peel carrots and grate coarsely. Rinse lentils in a sieve and drain well.

For the dressing whisk mustard, vinegar, oil, salt and pepper thoroughly in a bowl. Mix chicory strips, spring onions, carrots and lentils with the dressing.

To serve arrange whole chicory leaves on a plate and fill with lentil salad. Slice goat cheese into rounds, halve if needed, place on the salad and sprinkle with pepper before serving.
