Ingredients
- 500 g red onion
- 1.5 kg lingonberries (fresh or frozen)
- 400 g raw sugar
- 80 ml vinegar essence
- 250 ml dry red wine
- 100 ml Cassis
- 2 tsp sea salt
- 2 tsp cayenne pepper
- 5 jam jars (with lids)

Peel and finely dice the onions, clean and rinse the lingonberries. Combine all ingredients in a pot and simmer over medium heat for about 45 minutes until the mixture thickens; taste and adjust seasoning. If desired, add more wine or sugar to taste.

Place the cleaned jars in hot water. Remove them just before filling and invert onto a clean kitchen towel to drain. When pouring the chutney, the jars must still be hot. Seal the jars immediately and set them on their lids for about 10 minutes.
