Ingredients

  • 2 mangos
  • 1 apple
  • 3 fresh red chilies
  • 2 dried red chilies
  • 2 Garlic cloves
  • juice of 1 lemon
  • 100 ml apple cider vinegar
  • 0.5 tsp grated ginger
  • 0.5 tsp Salt
  • cayenne pepper to taste
  • 50 g maple syrup
  • 2 tsp cornstarch

Instructions

  1. 1.

Peel, halve, and separate the flesh from the seed of the mangos; cut into pieces. Wash, dry, peel, quarter, remove core of the apple and dice into small cubes.

  2. 2.

Wash, halve, deseed, and dice the chilies. Peel and finely chop the garlic. Combine lemon juice, vinegar, garlic, ginger, salt, and cayenne pepper in a pot and bring to a brief boil over medium heat.

  3. 3.

Add mango flesh, fresh chili cubes, and whole dried chilies; gently stir. Simmer the chutney over medium heat for about 10 minutes until the mango and apple pieces are soft.

  4. 4.

Stir in maple syrup. Whisk cornstarch with a little water and use it to thicken the chutney. Remove from heat and fill prepared jars with the apple-mango chutney.
