Green Tomato Chutney

Spicy, sweet, delicious. Green tomato chutney from Spoonsparrow is versatile as a spread, dip or accompaniment to meat dishes.

Ingredients

  • 600 g green tomatoes
  • 1 tsp salt
  • 40 g whole cane sugar
  • 150 ml white wine vinegar
  • 50 g dried dates
  • 4 shallots
  • 5 g Ginger
  • 1 tsp mustard powder
  • 1 tsp hot paprika powder
  • 0.5 tsp turmeric powder
  • Pepper

Instructions

    Wash the tomatoes, cut off the stem ends and roughly dice them. Sprinkle with 1 tsp salt and about half of the sugar. Mix well and cover to marinate overnight.

    On the next day strain through a sieve and transfer to a pot. Stir in the vinegar. Pit and finely chop the dates. Peel and finely dice the shallots, then add them along with the dates and remaining sugar to the tomatoes.

    Bring to a boil while stirring occasionally. Then simmer for about 35 minutes. Meanwhile peel and grate or finely dice the ginger.

    Add mustard powder, paprika powder, turmeric powder and ginger to the pot, stir in, and continue to cook for another 10–15 minutes until thickened, stirring occasionally. Adjust spice levels to taste.

    Season the green tomato chutney with salt and pepper. Fill prepared jars and seal tightly.
