Lime Granita

A refreshing lime granita made with fresh ingredients from the tropical fruit category. Try this and other recipes from Spoonsparrow!

Ingredients

  • 4 limes (for about 150 ml juice)
  • 100 g sugar
  • 400 ml sparkling wine

Instructions

    Rinse the limes under hot water, pat dry, cut thin long strips of zest from one lime and grate zest from the remaining limes.

    Halve the limes and squeeze out the juice.

    Cook the sugar with 100 ml water for about 5 minutes and let it cool.

    Stir together the sparkling wine, lime juice, zest, and simple syrup.

    Pour the mixture onto a tray and freeze in the freezer compartment for 3–4 hours, stirring 2–3 times at first to keep it smooth. Scrape the solid granita off the tray with a metal spatula and fill frozen glasses. Serve garnished with one lime wheel each.
