Ingredients
- 400 g frozen lima beans
- 2 red onions
- 3 sprigs Mint
- Salt
- 1 tsp fennel seeds
- 4 tbsp white wine vinegar
- 40 ml olive oil
- Pepper (freshly ground)

Let the beans thaw. Peel and slice the onions into thin strips. Wash the mint, shake off excess water, and tear the leaves.

Cook the beans for about 10 minutes in salted water. Drain, let them cool, then mix with the onions, fennel seeds, vinegar, and olive oil. Let the mixture rest for about 20 minutes. Stir in the mint and season with salt and pepper. Garnish with mint sprigs.
