Ingredients

  • 125 g brown lentils (from the health food store)
  • 1 Garlic clove
  • 1 bay leaf
  • 3 tbsp balsamic vinegar
  • 2 tbsp Soy sauce
  • 1 tsp thyme
  • 4 tbsp olive oil
  • 2 Spring Onions
  • 100 g celery sticks
  • 2 Tomatoes
  • 300 g horned pasta
  • 50 g sorrel
  • Salt
  • Pepper

Instructions

    Peel the garlic and cook with the bay leaf, lentils, and 600 ml water for 2 minutes. Remove from heat and let stand for 1½ hours.

    For the sauce whisk vinegar, soy sauce, olive oil, salt, pepper, and thyme together. Trim the spring onions, cut off ends, finely chop, and mix in. Wash the celery, slice into thin strips. Wash the tomatoes, dice, and fold into the sauce. Season with salt and pepper. Cook the pasta according to package instructions in plenty of salted water. After draining, simmer the lentils over low heat for another 10 minutes and combine with the pasta and sauce. Slice sorrel into fine ribbons and sprinkle over the salad.
