Ingredients
- 1 kg cherry tomatoes
- powdered sugar (for dusting)
- Sea salt
- 1 Garlic clove
- 2 tbsp lemon juice
- 5 tbsp olive oil
- pepper (ground)
- coarsely chopped basil (for garnish)

Preheat the oven to 220°C with fan and top heat.

Wash the tomatoes, optionally deseed them, and arrange on a baking sheet lined with parchment paper. Dust with powdered sugar, season with sea salt, and bake for about 5 minutes until the tomatoes begin to shrink slightly and caramelize lightly. Peel the garlic and slice it thinly. Mix the lemon juice and olive oil together and fold into the warm tomatoes. Allow to cool lukewarm, season with salt and pepper, and sprinkle with basil before serving.
