Beet, Apple and Cheese Salad

Ingredients

  • 600 g beetroot
  • Salt
  • 2 EL white wine vinegar
  • 1 TL cumin powder
  • 1 EL sugar
  • 1 handful lamb's lettuce
  • 1 handful frisée lettuce
  • 0.5 radicchio
  • 3 apples (Granny Smith)
  • 0.5 lemon
  • 100 g cheese (Wensleydale)
  • 4 EL honey
  • 4 EL Olive oil

Instructions

    Peel the beetroot and cut into strips. Cover with water in a pot, add salt, vinegar, cumin and sugar. Bring to a boil and cook for about 15 minutes; then drain and let cool.

    Meanwhile wash and dry the leafy greens. Tear the radicchio. Wash the apples, quarter them, core and slice. Squeeze lemon juice and mix the apples with 2 EL lemon juice. Combine beetroot, apples and greens and arrange on plates. Remove rind from cheese, crumble it over the salads. Drizzle remaining lemon juice, honey and olive oil.
