Falafel Burger with Grilled Vegetables
Spoonsparrow presents: Falafel burger with grilled vegetables in collaboration with Kerrygold. Oriental street food reinterpreted!
Ingredients
- 400 g dried chickpeas
- 4 Garlic cloves
- 1 onion
- 0.5 bunch flat-leaf parsley
- 0.5 bunch coriander
- 1 tbsp sweet paprika powder
- 1 tbsp Ground cumin
- Salt
- 1 tsp chili flakes
- 1 tsp Baking powder
- 1–2 tbsp flour (as needed)
- ground black pepper
- 1 small red bell pepper
- 1 small yellow bell pepper
- 1 small zucchini
- 1 tbsp oil
- 2 tbsp white wine vinegar
- 500 ml oil (for frying)
- 1 large baguette (bread)
- 200 g Ajvar
- 4 slices Kerrygold Original Irish Burger Cheddar

Place chickpeas in a large bowl and pour enough water over them to cover by about 8 cm. Cover and let soak overnight (8–12 hours).

On the next day, peel and roughly chop the garlic. Peel and roughly dice the onion. Wash the herbs, shake off excess moisture, and remove leaves from stems. Drain the chickpeas, rinse with cold water, pat dry, then pulse in a food processor with garlic, onion, and herbs until finely blended; transfer to a bowl.

Combine the blended chickpeas with paprika powder, cumin, 1 tbsp salt, chili flakes, and baking powder, mixing thoroughly. If the mixture does not hold together, stir in an additional 1–2 tbsp flour. Season well with salt and pepper, cover, and refrigerate.

Clean and wash the bell peppers and zucchini. Slice the zucchini into about 0.5 cm thick rounds. Cut the peppers into pieces roughly 4 cm long. Toss the vegetables in a bowl with oil, salt, pepper, and vinegar. Grill on a hot grill or in a skillet for about 5 minutes, then transfer to a plate and let cool.

Shape the falafel mixture into oval patties about the size of an egg. Fry portions in hot oil until golden brown. Drain on paper towels.

Cut the baguette into four equal pieces, split horizontally, and spread Ajvar on the cut sides. On each lower baguette slice place grilled vegetables and three falafels. Slice cheese and distribute over the falafels. Top with the upper baguette slices. Serve remaining falafels and Ajvar on the side.
