Lemon Stars

These lemon stars are a delightful dessert that can help meet daily needs for nutrients and vitality without additives.

Ingredients

  • 1 Organic lemon
  • 125 g fine whole wheat flour
  • 100 g butter
  • 50 g sour cream
  • Salt
  • 125 g quince jam
  • 75 g powdered sugar (from cane sugar)

Instructions

    Wash the lemon hot, dry it, and grate the zest. Mix flour, butter, sour cream, half of the lemon zest, and a pinch of salt with the dough hooks of a hand mixer until smooth.

    Wrap the dough in cling film and chill for 1 hour.

    Divide the dough into three portions and roll each out to 5 mm on a floured surface.

    Cut star shapes from the dough. Re-roll any remaining dough briefly, cut more stars, and repeat until all dough is used.

    Place the lemon stars on a parchment-lined baking sheet. Bake in a preheated oven at 180 °C (160 °C fan, gas: level 2–3) for about 10 minutes until golden yellow. Remove from the oven and cool on a wire rack.

    Warm the quince jam slightly and stir until smooth.

    Spoon ½ tsp of jam onto half of the lemon stars.

    Place the remaining stars on top and let set.

    Squeeze 2–3 tbsp of lemon juice from the lemon. Mix powdered sugar, lemon juice, and remaining zest. Brush this glaze over the tops of the lemon stars and allow to dry.
