Quark Cream Cake with Fruits

- 150 g soft butter and sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 3 eggs (size M)
- 150 g instant flour
- 2 tsp Baking powder
- 10 white leaf gelatin sheets
- 1 ripe Mango
- juice of one lime
- 500 g Low-fat quark
- 150 g sugar
- 500 ml whipping cream
- 250 g peaches
- 150 g pineapple
- 1 baby pineapple
- 6 tsp sugar
- mint
- powdered sugar (for dusting)

Beat butter until creamy. Gradually fold in sugar, vanilla sugar, salt and eggs. Mix flour with baking powder and incorporate into the batter. Line a 26 cm springform pan with parchment paper. Pour the dough in and smooth the surface. Bake in a preheated oven on the middle rack at 175°C (gas: level 2-3, convection: 160°C) for about 30 minutes.

Let the cake base cool in the pan for 10 minutes. Then carefully remove it from the pan and place it on a parchment-lined cooling rack. Remove the parchment. Let the base cool completely. Cut the cake horizontally once and slice the top layer into pieces. Place the lower layer on a plate and encircle it with a cake ring.

Soak gelatin in cold water for 10 minutes. Peel the mango and cut the flesh away from the fibrous core. Puree mango flesh with lime juice. Mix quark with the mango puree and sugar. Squeeze out excess liquid from the gelatin and dissolve it. Add 2-3 tablespoons of quark mixture, stir quickly, then fold into the remaining quark mixture. Chill until the mixture begins to set.

Whip cream stiffly and fold it into the quark mixture. Cut fruits into pieces. Spread quark cream on the cake base, layering in fruit; the top layer should be quark-mango-cream. Gently press biscuit cake pieces at a slight angle into the cream. Refrigerate the cake for 2-3 hours.

Peel pineapple and slice thinly. Heat sugar in a large non-stick pan. Sprinkle pineapple slices with sugar and briefly brown them on both sides. Place the slices side by side on paper towels. Carefully remove the cake ring, garnish the cake with pineapple slices and mint leaves, and dust with powdered sugar before serving.
