Ingredients
- 500 g brown syrup
- 500 g flour
- 200 g sugar
- 100 g honey
- 5 tbsp water
- 1 tsp ground cloves
- 1 tsp allspice
- 1 tsp coriander
- 2 tsp Cinnamon
- a pinch grated nutmeg
- a pinch baking soda
- 5 g potassium carbonate
- 200 g almond flakes (lightly toasted)
Instructions

Heat the water in a pot, and dissolve honey, syrup, and sugar in it. Let the liquid mixture cool. Dissolve potassium carbonate and baking soda in a little water. Mix flour and spices and knead with the liquid ingredients. Wrap the dough in foil and let rest 1-2 days in a dark, cool place.

Preheat the oven to 200°C. Knead the dough well and roll it out to about 1 cm thickness. Cut into roughly 4 x 10 cm rectangles. Place on a lightly greased or parchment-lined tray and bake for 20 minutes. Brush hot printen with sugar water and let cool, optionally sprinkling almond flakes, then dry thoroughly.
