Lemon Soufflé

Ingredients

  • 4 lemons
  • 2 Eggs
  • 50 g sugar
  • 1 heaped tbsp flour

Instructions

    Cut off a lid from each lemon and straighten the bottom for stability, then hollow out the lemons and strain the pulp through a sieve to collect the juice.

    Separate the eggs. Beat the yolks with half of the sugar and about 6 tbsp lemon juice in a double boiler until creamy.

    Whisk the whites with the remaining sugar until stiff peaks form, fold into the flour and then gently fold into the yolk mixture, fill the hollowed lemons and bake in a preheated oven at 180°C for about 15 minutes. Remove immediately and serve.
