Lemon Charlotte with Yogurt

Ingredients
- 5 sheets gelatin
- 400 g natural yogurt
- 1 vanilla pod (aroma)
- 150 g sugar
- 1 untreated lemon (juice and zest)
- 200 ml heavy cream (at least 30% fat content)
- 400 g kumquat
- 100 g sugar
- 40 ml orange liqueur
- 20 orange peel segments

Soak the gelatin in cold water. For the cream mix the yogurt with the vanilla aroma, sugar, lemon juice and zest.

Whip the cream stiff and fold it into the yogurt. Melt the soaked gelatin in a pot, stir 2 tbsp of the yogurt mixture into the melted gelatin and whisk.

Return the gelatin mixture to the yogurt mass and whisk thoroughly. Fill the mixture into 4 equal-sized molds and let set in the refrigerator.

Wash the kumquats, quarter them and bring with sugar to a boil in a pot. Deglaze with orange liqueur and simmer for 5-10 minutes over medium heat.

Remove from stove and cool. Dip the molds in hot water, carefully pour onto plates, stand the peel segments upright on the Charlotte and serve with kumquat compote.
