Goat cheese with olives and nuts on pear fan

Fresh goat cheese topped with olives and nuts served on thinly sliced pear fans—an elegant fruit‑vegetable dessert from Spoonsparrow.

Ingredients

  • 2 large pears
  • 3 tbsp Lemon juice
  • 300 g goat cheese
  • 3 tbsp heavy cream
  • 70 g freshly grated Pecorino
  • 1 tbsp green olives (pitted)
  • 1 tbsp black olives (pitted)
  • 1 red chili pepper
  • 1 bunch Basil
  • 40 g pecan or walnut nuts (coarsely chopped)
  • 3 tbsp Walnut Oil
  • Salt
  • ground pepper
  • chopped nuts for garnish
  • basil leaves for garnish

Instructions

    Chop the olives for the herb cream. Wash, halve, seed and chop the chilies. Mix goat cheese, cream, Pecorino, olives, and chili; season with pepper.

    Blend basil leaves with pecans and walnut oil to make pesto; season with salt and pepper.

    Combine lemon juice with a little water. Wash pears, remove stems, shave into very thin slices using a vegetable mandoline, then immediately immerse them in the lemon‑water mixture.

    Arrange pear slices as wide fans on plates. Spoon the herb cream onto the fans, drizzle with pesto, and sprinkle with chopped nuts and basil leaves before serving.
