Lemon Salmon Pasta

Ingredients

  • 500 g linguine
  • Salt
  • 1 red chili pepper
  • 2 untreated lemons
  • 1 handful parsley
  • 1 handful coriander leaves
  • 4 tbsp avocado oil
  • 400 g Salmon fillet
  • black pepper (freshly ground)
  • 80 g freshly grated Parmesan

Instructions

    Cook the pasta in boiling salted water until al dente.

    Rinse the chili, halve it, remove seeds and finely chop. Wash the lemons hot, dry them, grate the zest finely and squeeze out the juice. Rinse the parsley and coriander, pluck the leaves and finely chop. Rinse the salmon, pat dry and cut into cubes.

    Return the drained, still slightly wet pasta to the warm pot. Add the chili, lemon zest, lemon juice, herbs (reserve a little for garnish) and 2 tbsp oil; mix well.

    Sauté the salmon in the remaining oil in a lightly oiled pan for 2-3 minutes, turning once. Remove from heat, season with salt and pepper, and let it rest briefly.

    Season the pasta with salt and pepper, transfer to a large bowl, arrange the salmon on top, sprinkle with Parmesan. Add the remaining herbs over the dish and serve immediately.
