Broccoli Linguine
Fresh, tasty and packed with vitamins!
Ingredients
- 1 red chili pepper
- 3 Garlic cloves
- 1 untreated lemon
- 1 Zucchini
- 50 g walnut kernels
- 500 g broccoli
- 500 g linguine
- Salt
- 50 ml olive oil
- black pepper
Instructions

Wash the chili, dry it, cut it open and remove the seeds. Peel the garlic and finely dice it with the chili. Rinse the lemon hot, dry it and grate its zest. Wash, trim and coarsely grate the zucchini. Roughly chop the walnuts. Wash the broccoli, dry it and divide into florets.

Cook the linguine in a pot of boiling salted water over medium heat according to package instructions until al dente. Drain and set aside. Blanch the broccoli in another pot of boiling salted water for about 4 minutes.

Heat oil in a large pan. Sauté the chili and garlic over medium heat for about 3–4 minutes.

Add the zucchini zest and sauté everything for about 3 more minutes. Add the noodles to the chili-garlic mixture and lightly fry over low heat for 5–6 minutes.

Stir in the broccoli, walnuts, lemon juice and zest. Season with salt and pepper. Serve the broccoli linguine on plates.
