Ingredients
- 8 fresh, firm plums
- 100 soft butter
- 150 g sugar
- 3 eggs
- 250 g flour
- 1 tsp Baking powder
- a pinch of salt
- 2 tsp grated lemon zest
- juice of 2 lemons
- lemon flavoring
- 50 g sugar (for dusting)

Wash the plums, pit them and cut into small pieces.

Cream the soft butter with sugar, beat in the eggs one at a time, then fold in flour, baking powder and salt. Mix in lemon juice, zest and flavoring with the plums. Pour the batter into a greased loaf pan (1L), sprinkle with remaining sugar, bake in a preheated oven at 200°C for about 1 hour, then let rest for 15 minutes in the turned‑off oven. Remove, allow to cool slightly, and turn out of the pan.

Before serving, best to let it rest overnight to absorb flavors.
