Italian-Style Mustard Seeds

The mustard seeds in Italian style from Spoonsparrow bring summer into the glass!

Ingredients

  • 2 fresh figs
  • 250 g light grapes
  • 1 Organic lemon
  • 1 lemon
  • 500 g apples
  • 250 g yellow plums
  • 80 ml white wine vinegar
  • 250 g whole cane sugar
  • 1 tbsp mustard seeds
  • 2 star anise
  • 2 tbsp shelled pistachios
  • 50 g mustard flour

    Wash the figs, dry them and slice into rounds. Wash the grapes, pluck off the stems and halve them, removing seeds if necessary. Wash the organic lemon hot, dry it and cut two thin, finger‑length pieces from the peel without the white pith. Peel the other lemons with a knife so that all white pith is removed, then fillet the flesh. Peel the apples, quarter them, remove the core and slice the flesh into strips. Mix with the lemon fillets to prevent browning. Wash the plums, halve them, remove the stone and halve again.

    Boil 750 ml water with the vinegar, lemon peel and whole cane sugar. Add the fruits with mustard seeds, star anise and pistachios to the broth, bring to a boil, then simmer for about 20 minutes at around 80 °C (the broth should no longer be boiling). Stir in the mustard flour and pour hot into glasses, seal immediately.
